CANAAN — Matthew Freund knew diversification was necessary to successfully continue in agriculture.
So back in the 1990s, the second-generation dairy farmer began experimenting at his East Canaan farm to see if he could come up with a product that not only would expand its operation, but also help the environment. The challenge was to find a use for the farm’s countless piles of manure, which, when spread on the land, gave off an odor and methane gas.
